Morning Hash (by Myra Nissen)

Ingredients

  • 1 portion of ham, cut into small cubes
  • 70% root vegetables (parsnip) or pumpkin
  • 30% green onion, bell pepper
  • 1 apple, cut into small cubes
  • 1 TBSP of ghee or coconut oil
  • 2-3 tsp of water or vegetable broth (e.g. Seitenbacher)
  • spice to taste (e.g. salt, pepper, oregano, rosemary and paprika; if you like it spicy add a little chili power, cayenne, or coriander)

Method

Step 1

Heat oil in a heavy pan. Add ham and root vegetables/pumpkin and apple. Stir so they don't stick.

Step 2

a. When the root vegetables / pumpkin is soft add the other vegetables. When it is almost done stir in the water or broth. It is done when the water evaporates.

Step 3

b. Another way to do this is to put it all in a baking dish and bake at 350°F (175°C) for 45 minutes. This might be the best method if you are in Strict Phase 2 (without oil).
